Bacon Anyone?

Albuquerque has a fun and unique event that is being hosted this weekend called “Southwest Beer, Bacon and Blues Fest” this Saturday April 15th from 11 – 5pm at the Balloon Fiesta Park.  This is a really fun event with great food and music.  I thought what better way to promote this event than to share one of our favorite quiches but with a unique change to it so that it features one of the “celebrities” at the festival – BACON!!

The quiche I am going to share with you is our Shredded Potato Quiche that has been a classic favorite here at the bed and breakfast since we opened.  Except this time rather than putting bacon served on the side we are going to make a beautiful lattice weave with bacon on the top of the quiche.  If you are a bacon fan this will be one of your favorite ways to make this quiche.

Shredded Potato Quiche

Ingredients:

1 16oz. package frozen shredded hash brown potato, thawed

1/4 cup butter, melted

5 eggs lightly beaten

1 1/2 cups shredded cheddar cheese

1 cup of ham or chopped broccoli (or use . cup of each)

1/4 cup milk

Salt, pepper for seasoning

Directions:

• Preheat oven to 375. Lightly grease a 9-inch pie pan. Press

potatoes into greased pie pan. Brush with melted butter.

Bake in preheated oven until lightly browned about 10 to

15 minutes.

• In a large bowl, stir together beaten eggs, milk, cheese, ham,

seasonings. Pour egg mixture into baked crust. Bake in

preheated oven until center is set. About 20 minutes. The

quiche will be browned on top and a knife inserted into the

center will come out clean.

***To make the lattice top on your quiche take strips of uncooked bacon and lay it on top of the quiche by weaving it on your quiche.  When you have the quiche woven with bacon to your satisfaction cut edges that are lapping off the egde of the quiche with kitchen shears.  Cook the bacon with the quiche for the 20 minutes.
